Understanding Pouilly-Fuissé

The appellation takes its name from two of its five communes — Pouilly and Fuissé — but the full picture is more nuanced. The villages of Vergisson and Solutré-Pouilly sit beneath dramatic limestone outcrops that lend their Chardonnays a strikingly stony, almost flinty character, while Fuissé and Chaintré tend to produce rounder, more opulent expressions. What unites them is a commitment to Chardonnay as the sole permitted grape and a terroir that consistently delivers wines of depth and longevity. Soils here are predominantly Jurassic limestone and marl, naturally limiting yields and concentrating flavour. The resulting wines typically show ripe orchard fruit — white peach, pear, baked apple — layered with hazelnut, buttered brioche and that unmistakable minerally thread that defines great white Burgundy.
