Immortalis Garnacha Blanca 2024 is a rare and compelling expression of white Grenache from Pago de Aylés — the only single-estate Pago appellation in all of Aragón, and one of just a handful across Spain. The winemaking philosophy at Bodegas de Aylés is rooted in ecological and sustainable viticulture — the estate has farmed organically since the 2020 vintage. Night harvesting is used to bring in the Grenache Blanc grapes at the coolest possible temperatures, preserving aromatic intensity and freshness. A cold pre-fermentation maceration is followed by temperature-controlled fermentation in stainless steel, then three months ageing on fine lees, a technique that builds texture and mid-palate weight while keeping the wine's natural acidity sharp and inviting.

In the glass, the wine pours a clear, bright pale gold. The Winery

Founded in 1994

Pago de Aylés is a family-owned winery located in Aylés, Aragon, with a history stretching back to the 12th century, when Cistercian monks began cultivating these lands after receiving them from Alfonso II in 1165. For five centuries, the estate passed through the hands of the Aragonese nobility, with Blasco Fernández de Heredia being the first secular owner. In 1994, the Ramón family acquired and reunified these historic lands, launching an ambitious agri-food project that would transform Pago de Aylés into one of the three largest historic private estates in Aragon, spanning over 3,100 hectares. The winery was inaugurated in 2000, equipped with more than 500 barrels, predominantly French oak. In October 2010, Pago de Aylés was officially recognised as a Vino de Pago, becoming the first Vino de Pago in Aragon and one of the few in Spain to hold this exclusive Denomination of Origin — considered the highest level of quality a Spanish winery can achieve. The estate also produces wines under the DOP Cariñena designation, including the Aldeya and Demba ranges. The winery's philosophy centres on the pursuit of viticultural excellence from vineyard to bottle. They practise sustainable viticulture, currently in the process of organic certification, with yields carefully restricted to 34 hectolitres per hectare. Harvesting takes place at night to preserve the terroir and the full aromatic potential of the grapes. Among the most celebrated wines is «S» de Aylés, a single-varietal Garnacha that was awarded Best Wine of Spain in 2018. Equally remarkable is «L» de Pago, the only rosé Vino de Pago in Spain. The estate also crafts parcel-specific wines such as Senda de Leñadores. Its environmental stewardship has led the European Union to include the estate in the Natura 2000 network as a Special Protection Area for Birds.
