Nose
Quince, ripe pear and honeyed nuances entwine with white flowers — orange blossom and jasmine — alongside bitter grapefruit zest and a subtle balsamic undercurrent.
Palate
Broad and silky on entry, with a generously full mouthfeel underpinned by granitic minerality. The texture is creamy yet precise, with crisp, restrained acidity and notable glycerol depth.
Finish
Long and distinctive, with a characteristic saline-bitter finish that is the unmistakable signature of old-vine Albillo Real grown on decomposed granite soils.
Albillo Real San Martín is a benchmark expression of one of Spain's most intriguing indigenous white varieties, crafted by Las Moradas de San Martín from certified organic and biodynamic old vines in the San Martín de Valdeiglesias subzone of DO Vinos de Madrid. Sitting at the foot of the southern Gredos mountain range, this corner of the appellation is defined by decomposed granite soils, significant altitude and a cooler, wetter microclimate than the rest of Madrid — conditions that translate directly into wines of rare freshness and mineral tension for the region.
The wine is aged for eight months in 500-litre second- and third-use French oak barrels, with bâtonnages performed on each full moon in keeping with the estate's biodynamic calendar. The result is a white that defies easy categorisation: structured yet seamless, with a mouthfeel so generous and enveloping that it almost behaves like a red wine in terms of weight and presence on the palate.
The bouquet is immediately captivating — quince, ripe Conference pear and honeyed undertones intertwine with white flowers (orange blossom and jasmine), bitter grapefruit zest and a subtle balsamic thread that hints at the wild scrubland surrounding the estate's mountain vineyards. On the palate, the wine is broad and silky, with a remarkable mineral salinity driven by the granitic terroir. The finish is long and distinctive, with that slightly bitter, saline signature that is the hallmark of a well-handled Albillo Real.
Best served between 7 and 10°C, it rewards patience in the glass: given time to open, a delicate buttery nuance emerges that speaks to the wine's age-worthiness and complexity. With scores of 90 points from Robert Parker's Wine Advocate and 92 points from the Guía Peñín, this is a wine that belongs on any serious list of premium Spanish whites.
